This is a saison science project. Complexity and fermentable sugars for this funky ale come from grapes that have been infected by the benevolent fungus called botrytis. This is the closest equal meshing of beer and wine that has ever been commercially produced. Noble Rot is brewed with pils and wheat malts and fermented with a distinct Belgian yeast strain. It has a spicy white wine body and a dry, tart finish.
